If you live in Portland or have visited recently and not been to Salt & Straw, you either loath all things sweet and delicious or are just absurdly busy. As one of Portland’s best and quirkiest ice cream shop, Salt & Straw offers the most unique flavors you are likely ever to find. Apricot and Citra Hops? Absolutely. Plum Sangria Sorbet? You betcha. You may be thinking that pepper doesn’t belong in ice cream, but one bite of Honey Balsamic Strawberry with Cracked Pepper and the miniature fireworks show of flavor in your mouth will prove you wrong.

Salt & Straw is the result of cousins Kim and Tyler Malek, who combined culinary love and business savvy (and a lot of blood, sweat, and tears) to take Salt & Straw from a small pushcart to a multi-location phenomenon (their first California location, in Los Angeles, opened this month). But it’s not just their success itself that is worthy of praise, it’s how they achieved it. Salt & Straw has a strong commitment to working sustainably, and in a recent tour of their facilities, we were treated to a behind-the-scenes look at their operations. Turns out, they take a very similar approach to production as our own philosophy of being “more than just green.” As much as possible, they source ingredients organically and locally, which not only supports the local economies where they operate, but also infuses unique flavors into their ice creams that differentiate a Portland location from, say, the new Los Angeles one.
